Description

Food and drink are core aspects of private and public life in Japan, and they serve as potent national symbols. Japanese culinary culture is among the most globalized ones, in terms of both, the presence of foreign elements within the daily consumption practices of the Japanese population, as well as the popularity of Japanese dishes worldwide. Unfortunately, the knowledge regarding Japanese food and its history is widely misrepresented. This course aims at identifying the most notorious misconceptions and the reasons behind their perpetuation. We will also explore food and drink as a window into studying social change in Japan, since the nineteenth century to the present.

Course objectives

The main objective of this course is to nurture students’ understanding of the interaction between historical forces and daily life. In addition, the course is intended to help students in developing academic skills, in particular analyzing the ways in which textual and visual sources can be used in research.

  2. Essay (food biography of 1000 words): 50%

Weighing

The final mark for the course is established by (i) determination of the weighted average combined with (ii) the additional requirement that all elements must receive a passing grade (6 or higher).
